According to Wikipedia, Sloppy Joe sandwiches originated in Sioux City, Iowa when a short order cook named Joe invented a “loose-meat” sandwich with tomato sauce sometime in the 1930’s. In 1969, Hunt’s introduced a canned tomato based sauce that when added to cooked ground beef resulted in a MANWICH. Manwiches aren’t bad! But, homemade Sloppy Joe sandwiches are better. My version is named after my silly poodle Josephine! As you can see, she is anything but sloppy. In fact, she is the perfect French diva and Alpha female. I love her.

I'm not knocking Manwich sandwiches but these are better!
Over medium high heat, saute beef and vegetables. Mash beef with a fork as you cook so that you have smallish crumbles. Cook until the beef is not pink and the onions have some color.
Sprinkle the seasoning powder over the beef and stir. Cook a few more minutes so that the seasoning marries with the beef mixture.
Add the tomatoes and sauce. Do not just dump the contents of the can on top of the beef. Add half a can each and see if you have the texture and amount of soupiness you want. Then, add more if you prefer. Stir and cook for about 10 minutes.
Keep on very low heat until you are ready to eat.
Assemble the sandwich: Mayo on the bottom bun, and mustard on the top. Then pile on the Sloppy Jo mixture and top with peperoncini and sliced red onions.
Serve with chips and a good red wine!
